I’ve been a lazy blogger. And I have some finished objects that I haven’t had the inclination to photograph.

I like to cook and share recipes, so I thought it might be fun to share this one.

It has also come to my attention that my photo sizes that I attach to ye olde blog from my flickr account cause the page to load slower than is desirable, so until I can come to terms with that (or figure out how the heck I’m going to fix it) I thought I’d just post a favorite recipe of Jeff’s to share with the whole wide world on such a cold and icky day. (He wants me to make this every other week or so.)One -Pot, CrockPot Chickn’ N’ Dumplin’s

So easy, your grandmother will be ashamed (so it’s best to not tell her.)

2 cups chopped celery

2 cups chopped carrots

1 small onion, chopped (if you like potatoes, you can add some of them too)

1 large can (family-sized) Cream o’ chicken soup

2 cups chicken stock (or chicken bouillon)

3 large chicken breasts (boneless, skinless or whatever you have on hand)

salt and pepper

1 can of biscuits, any style, ready to bake (I normally use a small can of Grands)

Add everything except for the biscuits to CrockPot. Turn on to “low.” Go to work. Come home from work. Fish out chicken pieces and shred, return to pot. Turn to “high” for about 20-30 minutes (until it starts to resemble something like boiling.) Open can of biscuits. Break off 1″ sized pieces of dough and roll into little balls, drop into pot, stir, return lid and cook for about 30 minutes. The little dough grenades will ‘bake’ and float to the top all puffy like when they are ‘done’.

Mmmmmmmm.

Jeff says to serve immediately with a peanut butter sammich. Now, enjoy your snow tonight Georgia folks! Don’t everybody have a mondo freak out, buy out all of the bread and milk from the grocery store and start driving like an asshole, Okay?

OK - now I have to go to the Grocery Store on the way home so I can have this for my dinner TOMORROW. Oooh - or maybe lunch. I can start it tonight, and then bring it into work and finish it off and serve it for lunch. I might share it with friends.

Jenny Says:

By the way - if you dare to mess with the recipe - try this.

Instead of dropping the biscuits INTO the mixture, let it stay on top and bake it in the oven the required amount of time. It makes a biscuit on top and a doughy mixture on the bottom.

That’s the way my grandmom used to maker hers. (without the crock pot)

Spazzmanda Says:

oooh, sounds like a good variation!
